Love Mochi, but it's too complicated to make? LAZY MOCHI TO THE RESCUE!
Basically, it’s a sweet, chewy bar made with glutinous rice flour and milk. It is gluten-free and if you use almond milk it is also lactose-free!
It has the consistency of a fudgy cake with a mochi texture.
Ingredients:
- 450g glutinous rice flour (get yours here)
- 2 cups (500ml) granulated white sugar
- 1 tbsp baking powder
- 4tbsp matcha (you can also replace it with chocolate, coconut shreds etc. for different flavours)
- 1 tsp vanilla sugar
- 5 eggs
- 1/2 cup (125ml) melted butter
- 350ml Milk (or milk alternative such as almond or coconut milk)
- Extra butter or oil, for greasing
Additional:
- Sweet Red Bean Paste for serving (get yours here)
- Ice cream
for serving
Directions:
- In a large bowl or stand mixer, combine glutinous rice flour, sugar, vanilla sugar, matcha and baking powder. Mix all these dry ingredients thoroughly.
- In a separate bowl, crack open all eggs and beat lightly. Add the melted butter, milk, and mix to combine.
- Combine the dry and wet ingredients together slowly.
- Grease your pan well, along the bottom and the sides to ensure your butter mochi doesn’t stick after baking.
- Pour the batter into the pan, and bake in a preheated 190ºC oven for 30min to 1 hour (depending on the thickness of the mochi) or until a toothpick inserted in the middle of the butter mochi comes out clean.
- Allow to cool for at least 10 minutes, then slice into squares and serve!
